How Are Green Peas Processed?

How are frozen green peas processed?

Frozen green peas are mainly used for home cooking or as a semi-finished ingredient. Their characteristic is that they retain the color, nutrients, and original flavor of fresh green peas.

  1. Raw Material Selection: Select plump, bright green peas to ensure good product quality.
  2. Washing and Sorting: Use a washing machine to thoroughly clean the surface impurities from the peas, and simultaneously sort out any substandard peas.
  3. Blanching: Briefly heat the peas in boiling water or steam for 1-3 minutes to fix the green color and prevent discoloration, thus preparing them for quick freezing.
  4. Cooling: After blanching, the green beans need to be immediately placed in a cold water bath for rapid cooling to prevent them from continuing to soften due to residual heat.
  5. Quick Freezing: Using a mesin pembekuan, the green beans are rapidly frozen at -35℃ to -40℃, allowing the water inside the beans to quickly form small ice crystals, thus avoiding damage to the tissue structure.

How are fried green peas processed?

Fried green peas are a type of snack food with a crispy texture and rich flavor. The finished product can be eaten directly.

  1. Raw material preparation: Fresh, plump green peas are selected, washed, and cleaned to remove impurities.
  2. Soaking: The green peas must be soaked for a long period (usually 4–10 hours) to allow them to absorb water and swell, ensuring even heating during the frying process.
  3. Draining and drying: After soaking, the green peas are drained to remove excess surface water. Some factories also pre-dry them to reduce splashing caused by moisture in the oil.
  4. Frying: The green peas are placed in a fryer, with the temperature typically controlled at 160–180℃. After frying, the green peas become crispy.

How to eat:

Fried green peas can be eaten directly.
