Not only are they widely grown worldwide, but they also have a high starch content and a soft texture, making them ideal for processing into potato chips. The carbohydrates, dietary fiber, and certain vitamins contained in potatoes make potato chips not only delicious but also nutritionally valuable.

Requirements for Raw Potatoes:
Not all potatoes are suitable for making potato chips. To ensure the taste, color, and quality of the chips, the factory has strict requirements when selecting raw materials:
Variety Selection: Generally, choose potato varieties with high starch content and low sugar content. These potatoes have a lighter color and a crispier texture when fried.
Appearance Requirements: The potatoes should be uniform in size, with intact skin and no insect damage or cracks.
Water and Sugar Content: Potatoes with a moderate water content and low sugar content are best for frying. Potatoes with too much sugar content tend to darken when fried, affecting the color and flavor.
The main steps in processing potatoes into potato chips:
Washing and peeling: Potatoes often have dirt and impurities on their surface, so they need to be repeatedly rinsed in a washing machine to clean them.
Slicing: Place the potatoes in a slicer and cut them into thin slices of uniform thickness. The thickness of the slices directly affects the taste of the potato chips and is generally maintained between 1.2 and 2 mm.
Blanching and removing starch: Freshly cut potato slices contain a lot of starch on the surface, so they need to be blanched or washed to remove excess starch. This step prevents the chips from sticking together during frying and also makes the finished product crispier.
Dehydration: Blanched potato slices contain a lot of water, so surface moisture needs to be removed to reduce oil content and oil temperature fluctuations during frying.
Frying: The dehydrated potato slices are quickly fried in a deep fryer at a high temperature of 160–180°C. The frying process determines the taste and color of the chips.
